Bruschetta
I've been making bruschetta now and then and it is awesome. This is one of the few recipes I came up with completely on my own. I just dice ripe tomatoes (any kind), throw them in a bowl with their juice, mince some fresh garlic, add some olive oil, balsamic vinegar, dash red pepper flakes, sea salt, fresh ground pepper and either fresh or dried basil (or both) depending on what you have. If the tomatoes aren't quite ripe enough I add a dash of sugar. Mix it around and let sit a few mins. Then I cut some baguette slices, lightly brush them with olive oil and toast in a skillet flipping once, or toasted in a George Foreman or panini press. Let the bread cool slightly then serve with tomato mixture. Amazing! Reminds me of what you get at the Olive Garden.

It was amazing, but you gotta have decent tomatoes, try to get the ripest you can, and add a little sugar if they still aren't ripe enough.
