Here is a recipe for Buckwheat Pancakes, which are very similar to Maple Tree Inn pancakes. This recipe comes from my copy of "Buffalo Cooks with Janice Okun: Memories and Recipes from a Life in Food". My husband, who grew up on Maple Tree Inn pancakes, said they were a very close match. He loved them. They are definitely great if you no longer live near the Maple Tree Inn and are desperate for their pancakes!
Buckwheat Pancakes
1 c buckwheat flour
1 c all-purpose flour
2 t baking powder
1 t baking soda
2 t sugar
salt to taste
2 beaten egg yolks
1/4 c melted butter
2 c buttermilk
2 beaten egg whites
2 or 3 T bacon grease *the original recipe doesn't call for this but this was a tip from my mother-in-law who worked at the Inn many years ago, the only thing I find puzzling about this tip is that the Inn doesn't serve bacon, so I don't know how they'd have bacon grease. They do serve sausage and ham. Either way I have seen other pancake recipes calling for bacon grease
Mix flours, baking powder, baking soda, sugar and salt together. Beat in egg yolks, butter and buttermilk, and fold in the egg whites. Cook on a hot griddle with very minimal oil or butter. Serve with warm maple syrup and butter. This made about 20 small pancakes.
The pancakes did come out a little bit more thick than the ones at the Inn, next time I will add a little more buttermilk.
