Carolina Crab Boil/ Low Country Boil

I had never heard of Low Country Boil until I saw Paula Deen make it on her show (a rerun from several years ago). I was interested to try it when I saw her make it, and then a week after seeing that episode, my Taste of Home magazine arrived with this recipe for "Carolina Crab Boil" which was somewhat similar to Paula Deen's Low Country Boil. So I ended up making the Carolina Crab Boil recipe but also added the unpeeled shrimp called for in Paula's recipe (I used about 1 lb of shrimp). Covered the kitchen table in newspaper but decided to not dump everything on the newspaper, we only used the newspaper to collect shells and the rest of the mess. It was really good. Messy but fun to eat. The family ate it but didn't completely love it. Personal preference, I would add maybe another onion and more potatoes because those are tasty dipped in melted butter too. Also, though I know the smoked turkey sausage added a lot of flavor to the dish, it ended up overcooked and dried out. I wonder if there is a way to avoid that, maybe brown it and then remove from the pan and add it back towards the end of cooking. Overall very good. I don't think I'll be adding this to the Master List though because I'm not sure I see myself making this again. I think for anyone who grew up eating Low Country Boil would love this.

I have found that my sausage overcooks when I cook it in dishes as well. I think your idea is a great one. I want to try this, but since most members of the family are against seafood I might wait until Caleb is gone.
