Baked Bacon

I recently hosted a bridal shower brunch and had to make a large quantity of bacon. I really did not want to have to stand in front of the stove frying bacon for hours, so I decided to try baking it instead, since I had seen this method on Food Network and heard about it various other places on the internet. I was completely blown away at how amazing the bacon comes out this way. It comes out perfectly cooked, and is so easy. I don't think I'll ever fry bacon again, and this will make it easier to make bacon for the whole family and have it all ready at once.

I followed two recipes as a guideline how to do it.

Food Network's "Oven Baked Pepper Bacon"

Martha Stewart's "Less-Mess Bacon"

I lined the pans with foil to make clean up easier. I did not use parchment. The only important thing to remember is that you have to watch the bacon really closely near the end, because it goes from perfectly crispy bacon to burnt bacon pretty quickly, and if it burns you've burned a whole batch of it. I also didn't follow the cooking times mentioned in the recipes, I just kept an eye on the bacon.
