
Fried Risotto Patties- I never even knew such a thing existed
until I attended a cooking club a few years ago. I tried to recreate those once and did not have good luck. So when I saw a recipe for them in the
America's Test Kitchen Family Cookbook, I couldn't wait to try them. However I didn't follow that recipe very closely, so I'll just explain what I did. I used
leftover risotto I had made from the day before, and made little patties out of it using my hands. I beat two eggs, added in some cayenne pepper. In another bowl I mixed up
panko, garlic salt, pepper, and italian seasoning. (The original recipe called for fresh or dry breadcrumbs but I love the added crunchiness the panko provided.) After forming the patties I first coated them in the egg mixture and then rolled them in the panko mixture. I then fried them in a little olive oil over medium high heat for about 4 minutes per side until they were brown and crispy. I found it necessary to add a little more olive oil to the pan when I flipped them. Serve hot. I sprinkled mine with a little lemon juice and salt and it really brought the flavor out. These were incredible and I will definitely make them again! There is nothing like something hot, gooey and cheesy! It is worth making risotto just to be able to make these the next day!
