Tonight I made steak quesadillas for dinner, using leftover medium-rare steak from yesterday's dinner. I sliced the steak into thin slices, then cut the slices into bite size pieces. I then warmed up a griddle, and sprayed one side of a flour tortilla lightly with cooking spray. I then put it on the griddle sprayed-side down, sprinkled it with some shredded colby jack cheese, and let it cook about 2 or 3 mins until the cheese was melted. I then topped with some of the chopped steak and diced fresh cilantro, more cheese, and another tortilla. I sprayed the top side of that tortilla and then flipped the whole thing over to cook the other side (as you would in a grilled cheese sandwich). Let it cook for about 2 or 3 more minutes (or more if you like- I wanted the steak to be medium not well done), took it off and sliced it and served immediately. These came out great!!!! Dip them in sour cream, salsa, or guacamole.
