Fresh Salsa
Yesterday I made some fresh salsa, and it came out amazing, thanks to this big box of very ripe homegrown tomatoes given to us. The salsa was so good, I could literally drink it! What I did was diced up the homegrown tomatoes and put them in a bowl making sure to add all the juice that gathered on the cutting board as I was cutting them up. Then diced up some sweet onion. I don't remember seeing "sweet onions" in the produce section all year but luckily I found them yesterday when I needed them. I know some other names for sweet onions are Walla-Walla and Vidalia. I chopped up fresh cilantro- mostly just the leaves, I avoided chopping too many of the stems because to me the stems seem a little grassy to eat. Finely minced fresh jalapenos after removing the seeds. (If you want very hot salsa, put some of the seeds in the salsa.) I then added kosher salt, sugar, and freshly squeezed lime juice. Make sure you use kosher salt, not table salt! The salsa was just incredible, it reminded me so much of Cafe Rio's. I would like to try this sometime using a can of diced tomatoes with juice. It probably wouldn't be quite as good as the batch made with fresh tomatoes, but I bet it would be an acceptable substitute when really good quality fresh tomatoes aren't available.

That reminds me. I forgot to tell you that Joe wanted me to pass on how amazing that salsa was, that is if it's the same salsa that you sent with Josh to Dan's. He loved it, and I'm assuming the others did, too, from what he was saying. :)

Ooooh, sounds simple and good. I'm a salsa-holic. I could eat chips and salsa as a meal.
