I recently hosted a book club where we were discussing the book "The Help" by Kathryn Stockett. If you have read the book, you'll remember that one of the characters (Minnie) is known for making caramel cakes. So I decided to make a caramel cake for book club and used this recipe for "Easy Caramel Cake" from Cook's Country. The cake was incredibly dry, and though the frosting was good it also was a bit dry. Honestly you'd have better texture and taste for the cake from a boxed mix. So I may make the frosting again sometime with a little more cream added, but wouldn't bother with the cake itself.
Caramel Frosting:
12 T butter, cut into 12 pieces and softened
2 c packed dark brown sugar
1/2 t salt
1/2 c heavy cream
1 t vanilla
2 1/2 c powdered (confectioner's) sugar, sifted
Melt 8 T of the butter, brown sugar and salt over medium heat. Whisk in cream and cook until bubbles appear on edge of pot. Off heat whisk in vanilla. Transfer hot frosting to a bowl and with electric mixer on slow speed, gradually mix in powdered sugar until incorporated. Increase speed to medium and beat about 5 mins until frosting is pale brown and barely warm. Add remaining butter one piece at a time until light and fluffy. Here is where I would add a tad more cream to the frosting. Frost cake.

I'm sorry that your cake turned out dry! I found this recipe in my Entertaining issue (from Cook's Illustrated) and when I saw that they used a yellow cake as the base, I turned to my favorite one, which is the Fluffy Yellow Layer Cake by Cook's Illustrated. I've made a TON of yellow cakes, many of them side by side to find a favorite, and this one always won. Since they said that they made a cake with all-purpose flour to be sturdy enough for the caramel frosting, and with buttermilk to cut the sweetness, this other cake base still fits the bill on both accounts! If you do want to give the recipe a go again (and I'd understand if you're over it!), I just wanted to mention that idea.
