Easier Fried Chicken
Yesterday I tried this recipe for Easier Fried Chicken from the Sep/Oct 2010 issue of Cook's Illustrated. I was really disappointed with it. The breading becomes nice and crispy but the skin underneath stays gross and soggy and slimy. Also, the breading nearly burns by the time the chicken is cooked to the correct temperature in the oven. Definitely not making this again, and still have never done fried chicken at home that was really any good. I still prefer this recipe for Oven-Fried Chicken over anything.
