Padma's Roasted Potatoes
I made this recipe for Padma's Roasted Potatoes last night for dinner. I did substitute thyme for the rosemary just because I don't really love rosemary. Also I baked them in my large cast iron pan rather than a shallow roasting pan. These came out fantastic. I would definitely make these again, and maybe add some garlic next time.
