I've been wanting to make Tiramisu for forever and finally tried this recipe for it last week. I found the recipe in my copy of the Complete America's Test Kitchen TV Show Cookbook. The cookbook also included instructions on how to heat the eggs if you did not want to use raw eggs. I had intended on buying pasteurized eggs so I could just use them raw, but I couldn't find any at my grocery store, so I decided to follow the directions to cook them. In step 2, gently whisk the egg yolks, sugar, salt and addtional 1/3 cup heavy cream (not called for in original recipe) in a double boiler set over gently simmering water until the mixture is heated to a temperature of 160 degrees. It is very important the water under the double boiler NOT be boiling- just a gentle simmer! After doing that, let cool and add to mixer bowl and procede with recipe by adding marscapone cheese.
Overall this was good. I did omit the rum because i don't like a strong alcohol flavor in desserts. However I felt the recipe was "missing something" so maybe next time I should try a rum extract or something like that. Also I oversoaked the lady fingers in the coffee mixture so they were a little too watery. Next time I will be careful not to oversoak them. Also next time I will use decaf coffee!
I think I will make this again. I wonder if the marscapone cheese substitute recipes I saw online would work or not? Marscapone is just so expensive!
