Homemade Stuffing

This is the first year ever that I made homemade stuffing. I usually do Stovetop because it is good and everyone likes it. However last year I watched my mother-in-law make her stuffing and I wanted to create something similar. My mother-in-law would tear up white bread (or a mix of white and whole wheat). Then she would boil the giblets I think with some onions to create a broth. Saute some onions in butter. Then add the broth, butter & sauteed onions, poultry seasoning, salt, pepper and 1 or 2 eggs. She would stuff some in the bird and then the rest in a pan and bake.

I don't stuff my bird. I love the thought of it, but I am just too paranoid about food safety to do it. Plus from what I read, by the time the stuffing in the center of the bird has reached a safe temperature, the rest of the bird is overcooked. So I just don't do it. Plus the hubby likes stuffing to be crunchy. This is how I made the stuffing today:

Cut up (into cubes) 1 loaf sturdy white bread. You could also tear the bread if you don't want to cut it. Boiled the turkey giblets in water with some onion, carrots, smashed garlic cloves, bay leaf, dash of thyme and splash of white wine added for more flavor. I read online you shouldn't include the liver because it will make everything bitter or taste like liver, so I left that out. I boiled it for quite awhile until I had a broth created. I then drained the broth, discarding everything else and reserving the broth. I sauteed minced onion and shredded carrot in butter. When it was softened I added the butter mixture to the bread, along with the broth I had made, poultry seasoning, salt, pepper, and 1 egg. Mixed it up well and put in a 9 by 13 pan that had been sprayed with baking spray. I baked it at 425 for about 30 mins I think. You can do more or less depending on how crunchy you like it. Most people would add celery to these steps as well but the hubby hates celery. Such a shame because it goes so well with stuffing and turkey soup. Also next time I'll add a touch of chicken base to the broth. 

If you don't want to make your own turkey broth, you can use storebought or just use chicken broth. 

Everyone loved the stuffing, so I will most definitely be making this again. I need to add it to my Master List. I think it would be good with mushrooms in it as well.

I can't go back to Stovetop after this.

I will have to try this i tried making some and the recipe called for rye bread and it was awful. i am going to try yours next time.
