Milk Gravy

Tonight I made fried pork chops with milk gravy. I needed bacon for making the Best Salad Ever so I fried the pork chops in a bit of the bacon grease, then used the drippings to make the gravy. I also added ground sage to the gravy. It was REALLY good! Note: I used wondra flour because I read it is better for gravy. I didn't measure everything exactly as this recipe says, I winged it but it came out great! I found this in The Yellow Farmhouse Cookbook

2 T fat or pan drippings
¼ c diced onion
1 T flour
1 c milk
salt and freshly ground black pepper to taste

Remove all but 2 T of fat from a pan that was used to sauté or fry any flavorful food such as a meat or chicken. Over medium heat, sauté the onion for 3 mins, stirring frequently. Sprinkle 1 T flour over the onion and whisk constantly over medium heat for 1 min or until you can no longer smell the flour.

Slowly stir 1 c milk into the mixture, whisking constantly over medium high heat, until it thickens, about 4 or 5 mins. Season to taste with salt and freshly ground black pepper.

Makes about 1 c of gravy.
