Garlic and Citrus Chicken by Giada de Laurentiis
Yesterday I made Garlic & Citrus Chicken which I saw Giada de Laurentiis make the other day on "Everyday Italian". Although the chicken itself didn't have much citrus/garlic flavor- the sauce did and was excellent. Having the sauce on the side worked well for those who preferred just the plain meat. The meat was very moist. After I put the marinade on the chicken the oregano looked like it burned but it still tasted great. I wasn't able to fit all the orange and lemon pieces in the chicken cavity, so I threw the extra pieces in the pan beside the chicken. I also did not cook the chicken on a rack since I don't have one. I roasted it in a regular glass baking dish and it was fine. I will definitely make this again. I used a 6lb chicken as called for in the recipe but next time I would use only a 3 or 4lb chicken if I didn't want any leftovers. I plan to use the leftover chicken today to make Giada's Chicken Carbonara. I made Lemon Roasted potatoes with this, and they were so good!
