Butter Rich Spritz



I think this is the recipe my grandmother used for Spritz cookies. This recipe comes from an old Pillsbury cookie recipe book. It is not dated, but if I had to guess I would say this was from sometime in the 50's or early 60's.

Butter Rich Spritz
Developed by Ann Pillsbury

"Enjoy these dainty cookies throughout the year... decorate for a festive touch."

Sift together:
2 1/2 c flour
1/2 tsp salt

Cream together:
1 cup butter, gradually add 1 1/4 cups sifted powdered sugar, creaming well

Blend in 2 egg yolks or 1 whole egg, 1/2 tsp almond extract and 1 tsp vanilla, optional: add some food coloring to color the dough

Add the dry ingredients gradually, mix thoroughly

Press a small amount of dough through a cookie press onto an ungreased baking sheet. Optional, sprinkle with colored sugar before baking.

Bake at 400 degrees for 6 to 8 minutes. Cool on a rack. If desired, decorate.

When I went on line to double check my Butter Rich Spritz recipe from the Buffalo News Holiday Recipe booklet circa 1968 Janice Okun (from my mother, and the year I was born) there was a link to your site. OF COURSE I had to check it out. And it didn't fail to delight. There was a picture (of cookies on a recipe cover that I remembered from my youth), and the cookies we made too... Ahh yes, when you're from Buffalo you really know what it means to BE from Buffalo. BTW my recipe is exactly the same but calls for three egg yolks. Look forward to checking out your site.
