Swedish Meatballs
I made this recipe for Swedish Meatballs which I found in my copy of the Cook's Illustrated Cookbook: Recipes from 20 Years of America's Most Trusted Cooking Magazine. It was incredible!!!!!!!!!!!! This reminded me of my grandmother's swedish meatballs but these were even better! The only changes I made were I used all ground beef, rather than half ground beef half ground pork. That was simply because I only had ground beef thawed. Also, I omitted the brown sugar from the sauce and sprinkled a little bit of nutmeg into it. The only thing I will do differently is next time I will double the sauce amount. I like a lot of sauce and this didn't have quite enough for me. Also I think you could less oil for frying, or even bake the meatballs instead. I wonder how well this would freeze. The meatballs would at least freeze well I bet. Hmmmmmm.
