Refried Beans
So the other day I made refried beans with dinner. I had never done anything more to them than open a can, but I googled some recipes for ideas on how to "doctor" them to make them better. I ended up mixing in some chicken stock, minced garlic, dash onion powder, some cumin, some oregano, pepper, dash chipotle pepper, dash ancho chile powder, and I think that was it. I cooked it in a pot on the stove, to thicken it a bit after adding the chicken broth. Then I baked it in an individual casserole dish until the top got a little dried out and it had thickened. WOW it was amazing! I can't wait to make them again. Really really good!
