I really miss Cafe Rio. Here is a copycat recipe for their Creamy Tomatillo salad dressing. I am updating this from the way I used to make it. There are lots of copycat recipes out there that all taste similar, so just use this as a guideline.
1 pkt Hidden Valley ranch mix, prepared according to directions (you can use the buttermilk mix or the regular)
green salsa (salsa verde), about 3 T
1/2 bunch cilantro, thicker stems removed
1 clove garlic, minced
1 lime, juiced (optional add some of the zest too)
5 or 6 pickled jalapenos; -or- 1-2 tsp green Tabasco, or fresh or roasted jalapenos w/ or w/out some seeds
dash cayenne pepper, optional
dash chipotle pepper
Pour prepared ranch into a blender. Add all ingredients and blend until well mixed. Season with salt and pepper if desired.
