Mini Breakfast Frittatas

Yesterday at a school meeting in the morning, one of the parents made these mini breakfast frittatas. They were delicious, and easy for a casual breakfast during a meeting because these could be eaten with your hands. These were in mini cupcake liners, but you could also use regular sized cupcake liners I am sure.

To make 48 mini frittatas: (the easy way)
1 bag pre-cooked shredded potatoes (any flavor)
1 bag precooked turkey sausage or chopped ham
1 bag shredded cheddar
7 eggs
1/4 cup milk
Mini cup cake liners (foil ones work best)

Using a teaspoon measure put potatoes in each muffin, then a teaspoon of meat. Beat together eggs and milk and put a tablespoon of mixture in each muffin and top each one with a healthy pinch of cheddar. You will have leftover of every ingredient except egg mixture.

Bake at 350 for 10-12 min. They continue to cook when you pull them out a little bit, so careful not to overcook.
