Chicken Rollatini

Yet another recipe I only loosely followed. I used bacon, not pancetta, and I used cheddar-jack sticks because I didn't have provolone on hand. I also sprinkled the bacon wrapped chicken with a little seasoned salt. I didn't do the escarole/cannellini beans side dish either.This was pretty great and I would make it again. Next time I'd like to try stuffed green beans or asparagus inside as well, and maybe more bread than called for.
