Turkey & Artichoke Stuffed Shells w/ Arrabbiata Sauce
I revisited this recipe and made it again with tweaks I suggested the first time I made. This time I made this as lasagna roll ups, because I had lasagna noodles to use up. I used spinach instead of artichoke and cottage cheese instead of ricotta. I also used store-bought spaghetti sauce (Gia Russa Hot Sicilian). I also put a little cheddar in the mix as I didn't have mozzarella and it sounded good. Over all these came out great again, though I think the best format would to use the stuffed shells- not as lasagna roll ups. I will definitely make this again.
