Carolina Grilled Chicken w/ Vinegar Mop from Cuisine at Home.
Combine:
1 T kosher salt
1 t each of ground mustard, ground coriander, and black pepper
Drizzle or spray 4 quarters of a chicken with some olive oil, sprinkle on spice rub and let sit for 15 minutes.
Whisk:
1/2 c cider vinegar
1 T each ketchup and hot sauce (such as Frank's Redhot)
1 t each kosher saltand sugar
1/2 each red pepper flakes and black pepper
Divide mop sauce in half. Grill chicken basting with mop sauce. When fully cooked (165 degrees), drizzle a little more of the reserved sauce on it and let stand 5 minutes.
This was INCREDIBLE!
