Cheesy Chicken Broccoli Orzo
I made a this tonight based on this recipe but didn't follow it exactly.
2 T butter
1 T olive oil
1 medium onion, minced
3 garlic cloves, minced
4 cups chicken broth
1 cup heavy cream
2 cups shredded cheddar
1 or 2 T parmesan or romano
2 cups chopped broccoli
1 t worcestershire
1 cup orzo
Sauteed onion in butter and olive oil until tender. Added broccoli florets, sauteed about 2 mins. Added garlic and sauteed another minute. Add chicken broth and orzo. Simmer about 10 mins, then add 1/2 cup of the cream. Cook 5 additional minutes until orzo is al dente. Add chicken, and remaining 1/2 cup cream to the pan. Stir in cheeses until melted. Season with salt and pepper. If mixture is too thick, add a little more chicken broth. Pour into baking dish and bake at 425 for 15-20 minutes. Optional top with breadcrumbs before baking. This was very very good. Next time I would add a few dashes of tabasco.
