Panera Inspired Breakfast Quiche
9 x 13 pan
Spinach Cheddar Bacon Quiche
1 puff pastry crust cut to fit bottom of 9x13 pan
5 eggs
1 1/2 cups shredded cheddar
half onion minced
a little more than half a bag spinach (preferably baby spinach)
1 1/2 cups heavy cream
salt pepper
bacon
optional: red bell pepper
Cook spinach and onion in a skillet in a little butter and olive oil. Transfer to a dish to cool. Par cook the bacon in the skillet, then cut into pieces.
Whisk eggs, cream, salt pepper, then mix in cheese, spinach & onion. Pour over puff pastry. Top with bacon pieces Bake in the bottom of the oven set to 375 (maybe try 400 next time). About 30 mins.
Ham Broccoli Cheddar Quiche
1 puff pastry crust cut to fit bottom of 9x13 pan
5 eggs
1 1/2 cups shredded cheddar
half onion minced
about 2 cups broccoli chopped up small
1 1/2 cups heavy cream
salt pepper
ham cubes
optional: red bell pepper
Cook onion in a skillet in a little butter and olive oil until softened, add broccoli and a half cup of water. Cover and cook a few minutes until broccoli is bright green and starting to soften. Transfer to a dish to cool.
Whisk eggs, cream, salt pepper, then mix in cheese, ham, onions & broccoli. Pour over puff pastry. Bake in the bottom of the oven set to 375 (maybe try 400 next time). About 30 mins.
Both would have been good with chives added.
