Sheet-Pan Sausage and Summer Vegetables by Pioneer Woman
This was excellent. You don't really even need to measure anything. The eggplant was my favorite part. I used hot italian sausages, not sweet, and I was glad I did. Start the cherry tomatoes same time you start the other veggies, and wait to add the sausage (cut in half and pricked all over with a fork) until about 20 mins in. Over all it took probably 45 mins roasting time to get the veggies really roasted. I also think I would add the balsamic vinegar at the 5 min left mark. Just so it kinda cooks in to the veggies. Definitely making this again! I will even do this with egg plant by itself!

Oven at 425. Convection recommended if it's an option. Toss veggies in olive oil and italian seasoning, salt and pepper. Preheat the baking sheets in the oven. Once hot, pull them out and spray with cooking spray. Add all veggies, cook about 20 mins. Stir veggies and add sausage. Cook about 25 mins more or until veggies are fully roasted. Add balsamic vinegar during last 5 mins.
