Hearty Eight Layer Salad

1 1/2 cups uncooked small shell macaroni or ditalini
3-4 Tablespoons Italian dressing
3 cups shredded lettuce
3 hard cooked eggs, sliced
1/4 tsp salt
1/8 tsp pepper
1 cup julienned ham
1 cup julienned turkey
1 package (10 ounces) frozen peas, thawed
1 cup mayo
1/4 cup sour cream
1/4 cup chopped green onions
2 tsp Dijon mustard
1 cup shredded cheddar cheese
Cook macaroni according to package directions; drain and rinse with cold water. Drizzle with Italian dressing; toss to coat. Place the lettuce in a 2 1/2-qt glass serving bowl; top with macaroni and eggs. Sprinkle with salt and pepper. Layer with ham, salami and peas. Combine mayo, sour cream, green onions, and mustard. Spread over top. Cover and refrigerate for several hours. Just before serving, sprinkle with cheese and parsley. *Note: You can use whatever lunch meat you have on hand. I don't necessarily refrigerate for hours before serving. Also, I usually use more like 2 cups of ditalini. Also, if you want to assemble this ahead of time, I would actually add the lettuce last (on top of the cheese) as it would keep it from getting soggy. Man I love this salad!!!
