My friend Michelle let me borrow a cookbook of hers, and today I made "Anderson's Chicken Salad" out of that cookbook. WOW! Best chicken salad I've ever had. Here's the recipe, which I did not follow exactly:
6 cups white meat chicken, cooked & chopped
1 head celery, chopped
1 c. pecans, chopped
1 large white onion, chopped
1 1/2 cups craisins
1/4 c whole grain mustard
1 1/2 cups mayo
1 tbsp thyme
1 tbsp dill
1 tbsp garlic salt
1/2 tsp white pepper
1/2 tsp nutmeg
1 tsp sea salt
Combine everything in a large bowl and mix well. Serve on croissants or in sandwiches, or with crackers. Makes 6-8 servings.
Now here's what I did: I took a large can of white chicken, drained it well, and pulsed it in the food processor like I always do. Then I added the rest of the ingredients without measuring them, although I did leave out the celery and pecans. This was absolutely incredible! One of THE best recipes I have made in a long time.

It definitely looks like a recipe I would like. I really like craisins. I wonder if it would be a good use of leftover turkey as well.
