Grilled Potatoes
Two nights ago I made grilled potatoes for dinner. They are SOOOO good and so easy. You take any sort of waxy potato such as red potatoes, cut them into chunks, toss with olive oil & sea salt, cover with sarah wrap and microwave until mostly tender. Then you grill them for a few minutes to make them a little crunchy and get grill marks on them. You can then drizzle them with melted butter with 1 fresh minced garlic clove and parsley, or just serve them and let people add their own butter. I got this recipe from Cook's Country magazine awhile back.
