Spicy Pasta Bake w/ Sausage

I made this tonight, not expecting it to be that good, but actually it was. In fact I think I will make it again. The chorizo gave it good flavor, but you could probably leave it out altogether to make it a decent vegetarian dish. I'd also like to try this with hot italian sausage.

1 lb chorizo sausage, halved lengthwise and sliced thin
1 onion, chopped fine
4 garlic cloves, minced
3 cups chicken broth
1 10 oz can Ro-Tel
1/2 cup heavy cream
12 oz penne
pepper
2 cups shredded pepper jack cheese
green onions, for garnish

Cook chorizo and onion in oven-safe skillet over medium high heat until lightly browned, about 8 minutes. Add garlic and cook about 30 secs. Add broth, tomatoes, cream, pasta, and pepper; bring to a boil. Cover and reduce heat to medium, cooking about 15 mins until pasta is tender. Off heat, uncover pan and stir in 1/2 cup cheese. Top with remaining cheese and broil til browned and bubbly. Sprinkle with scallions and serve.

*I skipped the broiling part only because I was lazy. I also used a little more cheese and chicken broth than called for.
