Lemon Potatoes
So I made a recipe for Lemon Potatoes today, based on this recipe I got in one of my cooking magazines. I used more smashed garlic than called for but forgot about the minced, more chicken broth than called for (also not low-sodium which worked out fine)- enough to pretty much completely cover the potatoes, omitted the lemon zest, dried parsley instead of fresh, bottled lemon juice instead of fresh, and I didn't really measure anything. I also quartered the baby red potatoes. This came out really great, even with me forgetting to add the minced garlic at the end. I definitely will remember it next time. I also would use more lemon juice, however maybe I am only saying that because I did not use the zest. But overall this was really great, and is definitely something I will make again. This is definitely going to be added to the favorites list.
