I had to make a carrot cake for a birthday, and I decided to try to make one, since the store bought ones are never that great, the boxed cake mixes are horrible, and any good bakery cake would be quite expensive. I looked through my cookbooks for a carrot cake recipe and found a recipe in my "Southern Living's Our Reader's Top-Rated Recipes". I need to start using my cookbooks more, sometimes I kind of forget about them and get the majority of my recipes from the internet. This recipe came out absolutely amazing, and is a good reminder for me not to forget about my cookbooks anymore!
I followed the recipe for "Best Carrot Sheet Cake" exactly and used pecans (it gives you the option of pecans or walnuts- I like pecans better.) This cake was totally AMAZING. It definitely lived up to all the good reviews it got on the internet. This recipe is a real keeper and I will definitely be making it again! It was so rich and moist and had great flavor. No boxed mix or store-bought cake could ever compare to this!
This is the best recipe I have tried in a long time!
