Swiss Chalet Fries
So Swiss Chalet was one of my favorite Buffalo restaurants, and I was so sad when I heard it was closing. I always loved their fries, and have been buying packets of sauce mix off the internet for years from buffalofoods.com or canadianfavourites.com . Well shortly after it was announced that it was closing, my mom said that she heard on the radio that they parboiled their fries before frying them. The article about it closing mentions that too. Well last night I tried doing that with russet potatoes, and they fries came out amazing. VERY VERY close to the real thing. Next I want to try peanut oil, I think that will make it closer to the real thing. Last night I used canola oil because that's what I had. I also might try making these with Yukon Gold potatoes because I saw one website that claimed that is the kind of potato Swiss Chalet uses, though another side claimed it was russets. I am so happy I can still have Swiss Chalet fries!!!! Check out the wiki about Swiss Chalet too.
