Turkey & Artichoke Stuffed Shells w/ Arrabbiata Sauce
Last night I made this recipe from Giada De Laurentiis for Turkey & Artichoke Stuffed Shells w/ Arrabbiata Sauce. I did not follow the recipe closely, but it still came out great. First off I used manicotti rather than shells, simply because I had a box of manicotti to use up. I hate manicotti noodles and won't buy them again. I would rather roll up lasagna noodles like for Lasagna Roll-Ups than fight with manicotti. I also prefer shells as they are easier to stuff. I also used cottage cheese instead of ricotta, because I absolutely hate ricotta cheese. I also used cooked, drained spinach instead of artichokes because I hate artichokes. And, I used a store bought spicy spaghetti sauce rather than making it from scratch. This really came out wonderful and I would definitely make again. I would like to try this with a gr turkey italian sausage rather than plain gr turkey. I also would like to try these with a touch of grated mozzarella in the filling. And I would skip the fresh parsley next time- I just don't like the flavor. Even with all the changes I made this recipe still came out great. I am going to try freezing it as Giada suggested when she made this on her show. I usually have good luck with Giada's recipes.
