I made this recipe for Grilled Lime Chicken tonight for dinner. I have no clue where I got the recipe from. It looks like it may have come out of Cooking with Paula Deen magazine but I'm not sure. This recipe was pretty good though it felt odd to marinate chicken in a mayo-based marinade. If I made this again I would cut the salt in half. I even used sea salt and it still came out way salty.
1 c mayo
1/2 c olive oil
2 t lime zest
1/3 c fresh lime juice
1/4 c minched fresh cilantro
4 cloves garlic, minced
2 t salt (use less!!!! maybe cut by half)
2 t hot sauce
6 boneless skinless chicken breats (about 3 lbs) pounded thin for even cooking
1 onion thinly sliced
Mix all ingredients, add chicken and marinate overnight or at least 4 hours. Grill until done.
