I really like watching the tv show
Home For Dinner with Jamie Deen. I feel like for the most part his recipes are realistic- they don't require any oddball ingredients, expensive kitchen equipment, or difficult techiques and they usually are something any home cook can prepare. So tonight I tried his recipe for
Butterflied Chicken with Roasted Root Vegetables and Pan Gravy (recipe disappeared from Food Network website). It was incredible, and easy!!!!!!!!! Yes it took some time to bake but plan ahead and no problem. A few notes: I didn't have any rosemary by itself but I had italian seasoning that had rosemary in it, so I used that and herbs de provence, and the fennel, because hey, I'm not picky when it comes to herbs. I think next time I would skip the fennel, it just didn't do much for me flavor wise. Next time I think I'd use maybe some basil or thyme or something. Next time I'll add some whole cloves of garlic, and maybe some parsnips or sweet potatoes. I will also try to increase the amount of veggies which might be a little difficult to get them all to fit in the pan. I did use a cast iron pan like Jamie did on his show. Love having an excuse to use it!
I just can't believe how awesome this recipe was. I will definitely make it again.
Butterflied Chicken, whole chicken, remove spine, flatten chicken. Fennel
seed, crushed with knife, sprinkle on outside of chicken. Salt and pepper. 2 T
olive oil in cast iron pan. Fresh rosemary, chopped, sprinkle on chicken. Add to
hot skillet, skin side down. Sprinkle other side of chicken with all the same stuff.
Shallot, carrots, fingerling potatoes, cut close to same size. Drizzle with
olive oil so seasoning adheres. Salt & pepper. Flip chicken once nice and
crusty brown. Sprinkle veggies around pan. Put in 350 degree oven. About an
hour and 10 minutes. Take chicken out, don’t be discouraged if it falls apart. Take
veggies out. Add 1 cup white wine and about one cup chicken stock. Add 2 T
butter. Cook sauce down, pour oven chicken & veggies.
