Occasionally we have "breakfast for dinner" so tonight I decided to try Pioneer Woman's Best Breakfast Potatoes along with our eggs and ham. They did not disappoint! I followed the recipe exactly though I found mine needed a lot more cooking time than her recipe called for. Maybe the potatoes were cut a little too big. Either way, these were fantastic, and I will definitely make them again. *I read in one of the comments that someone also added a bit of bacon grease to the potatoes- I will have to try that sometime.
*Update, made these again on 12/14/14 and added some sweet potatoes. Came out awesome! Didn't try the bacon grease yet.

I've been looking for a good recipe for these, when we have a big breakfast they are fun and something a little different than hashbrowns. I will have to try this recipe.
