Chicken Souvlaki like Sophia's Restaurant in Buffalo
as seen on Food Network's Diners, Drive-ins & Dives.
I didn't have any measurements to go off of, but after watching the video, I knew to marinate the chicken in a mixture of oil, lemon juice, dried parsley, dried oregano, dried basil, granulated garlic and salt. I marinated it 24 hours, then seared in a cast iron skillet with a little oil until golden brown on each side. Served it with iceberg salad, tomatoes, onions, greek olives and a side of tzakiki. This was totally incredible. Need to figure a homemade greek dressing to go with it.
The tzatziki was plain yogurt, dill, lemon juice, lemon zest, fresh garlic, granulated garlic, salt, and grated cucumber. Pretty darn good but seemed it was missing something. Don't know what though.
