Chop Suey

RAMSEY FAMILY CHOP SUEY
(ROBERT L. RAMSEY'S RECIPE)

NOTE: This is for a small batch. It can easily be doubled or tripled.

1 large cabbage chopped bite size
1 large package fresh mushrooms sliced
2 medium white onions chopped (more or less to taste)
1 pkg celery chopped bite size including leaves
2 large cans La Choy bean sprouts drained & rinsed
1 lb pork cut into bite size pieces
2 lb beef cut into bite size pieces
1 small bottle soy sauce (not sodium reduced)
1 small bottle of ketchup (any brand is fine)

Directions:

Brown meat in a small amount of oil in a large kettle type pan. Add cabbage, onions & celery. Add about 1/2 of small bottle of ketchup and about 1/4 bottle soy sauce to start with. Simmer with a lid on for about an hour or more and stir often. Add more ketchup and soy to taste. I usually use a whole bottle of ketchup and about half of small bottle of the soy sauce. Add drained bean sprouts & mushrooms near end. Serve over Uncle Ben's cooked white rice. The suey broth should have a nice brown color. Splash with a little soy sauce and serve. It freezes well. According to my late father Bob Ramsey this was a "blue plate special" depression dish.
