Buttermilk-Brined Fried Pork Chops from Paula Deen Magazine
I could not find this recipe anywhere online. I did not follow it exactly but close enough. Essentially you marinate pork chops in buttermilk, hot sauce, salt & garlic power. Mix additional buttermilk with an egg. Create a seasoned flour mix with onion & garlic powder and black pepper (cayenne would be good too). Remove pork chops from marinade, dredge in flour, then roll in egg mixture, then back in the flour, then fry under cooked through.
I had some issues with the breading not staying adhered during cooking. Overall this was very tasty, if not healthy. It is basically like fried chicken, except done to pork chops. I might make it again.
