Grilled Steak Fajitas from Cook's Country magazine
Basically you marinate skirt steak in soy sauce, pineapple juice, garlic. (Reserve a little of the marinade before adding the meat). Sprinkle with salt & pepper just before grilling. Also slice up red, yellow and orange bell peppers and purple onion, toss in oil and salt and pepper and grill in a grill basket. Toss veggies in reserved marinade and fresh chopped cilantro. Serve with guac and pico de gallo. This was decent, but not spectacular. I think there are probably better fajita recipes out there. I thought the marinade could have used some cumin and lime. I did like the pineapple juice added a very faint bit of sweetness without overpowering.
The best part of this recipe were the instructions to wrap the tortillas in foil and warm up on the grill. Great idea!!!
If I make this again, I'll be adding a lot more seasoning to it.
