Dr Pepper Pulled Pork

This was very loosely based on a recipe from Pioneer Woman and another recipe I had clipped. Pioneer Woman's recipe called for chipotle chilis in adobo and I do not like chipotle as I think it is just too hot.

I cooked a pork butt or shoulder, I think mine was a shoulder but can't remember for sure, the recipe called for either. Mine cut of meat had a mesh wrap on it and I took that off as I wanted the meat to fall apart. Added 1 can of Dr Pepper, about 2 T brown sugar, 2 bay leaves, some liquid smoke, some "tamed" pickled jalapenos, sprinkled the chunk of meat with seasoned salt and pepper, and a little cayenne. Added onion cut pole to pole in wedges. The onions will literally disintegrate into the meat when cooked and it's delicious. I cooked in the pressure cooker on high for 2 hours. Then I scooped out some fat, shredded the meat, removed the bay leaves, returned everything to the pot and boiled it until the sauce reduced a good amount. Serve with bbq sauce, and it was really really good. I will definitely make this again!
