I want to document my method for making homemade sweet potatoes for the holidays. I grew up eating canned sweet potatoes and never liked them. Once I tried them homemade at a friend's house, it totally changed how I felt about them. I've finally perfected my method.
Peel sweet potatoes and cut into large cubes, and throw them in water as you chopped them up. If you leave them sitting on the counter as you prep all of them, they will develop brown spots while sitting there (same as an apple turns brown when exposed to air). Once all are chopped, rinse well, throw in casserole dish. Add 5 tablespoons butter cut into chunks, about 1/2 cup maple syrup, 1/2 cup brown sugar, pumpkin pie spice (or apple pie spice), garlic salt, pepper, about 1 1/2 to 2 cups water. Mix, then cover with foil or a glass lid and bake at 400 for about 45 minutes, stirring once halfway through. After the 45 mins is up, uncover the dish and bake another 30 mins or so, stirring once halfway through.
These are SOOO good.
