Thai Drunken Noodles with Beef from Taste of Home
I was honestly shocked how awesome this recipe came out! Tasted just like takeout! I had to make two substitutions since I could not find Thai Basil, I used regular basil and I could not find Thai red chilis so I used 1/2 teaspoon Thai roasted red chili paste. I also cut the soy sauce back to about 1/3 cup based on other reviews that said it was too salty. I think 1/3 cup soy was perfect and I do use the reduced sodium soy.
This was totally amazing and I would definitely make it again.
Notes for next time:
-this recipe makes a huge batch- easily enough for 8 people. Next time I will make only a half batch or even a quarter batch!
-use more Thai chili paste- maybe 1 teaspoon or 1 1/2 teaspoon
-or maybe add red pepper flakes or dried arbol chilis
-double the amount of meat called for
-you can easily sub in any protein i.e. shrimp, chicken, pork, scallops
-add scallions (light green and dark green sections)
-you could add bok choy, baby corn, green beans, broccoli, broccolini, snow peas
