Saw a few tik tok videos about pastina. I had never heard of this before, but it sounded like it'd be great when you're under the weather. So I woke up with a nasty cold and decided to try this. I followed the recipe above but I did add a little chicken base to ramp up the chicken flavor. This was really awesome. So quick and easy. I will definitely make this again and again. This would also be a good side dish. If I ever get really motivated, I'll sauté carrots, onion & celery before I go on the other steps. The second time I made it, I sprinkled on some red pepper flakes when serving and it was awesome. Fresh grated cheese is the best, the jarred grated cheese will make the soup a little gummy, but it still tastes good.
Ingredients
- 4 cups chicken stock
- 1 cup pastina
- 50 g butter
- 1/2 cup grated romano or parmesan
- pinch of salt
- drizzle of olive oil
Instructions
- In a medium sized pot on a high heat, bring the chicken stock to a boil. Add the pastina and butter to the chicken stock and immediately turn the heat down to low - medium. Continuously stir the pastina until it’s plump and has absorbed 80% of the liquid.
- Take the pastina off the heat, season to taste with salt and stir through the cheese . Finish off with a sprinkling of extra cheese and drizzle of olive oil
