Beef Stroganoff

Looking thru my blog, I've made many versions of Beef Stroganoff. I made yet another version tonight, based on this recipe from Food Network. I basically used this recipe as a guideline and made some changes. I used filet mignon because it was what I had. I did not mix all the liquids together before adding them. After sauteing the onions and mushrooms for awhile, I added the flour, cooked a minute or two, then added sherry wine, cooked it down, then added beef broth, mixed in well, then added some heavy cream, and the dijon. I'd leave out the dijon next time I think. I added the sour cream at the very end. Oh and I added Flavor Master Garlic Peppercorn liquid seasoning. Next time I'll add a dash of Worcestershire and a dash of maggi. Overall this was great. 

Things I would like to try sometime in it: pearl onions, whole mushrooms, other kinds of mushrooms, cognac or brandy, maybe a tiny amount of tomato paste.
