Soup Series Part 3 - Creamy Chicken and Broccoli Soup

 Cream Chicken and Broccoli Soup from Bon Appetit Magazine 

Well, I didn't follow this exactly. Used it more as inspiration. Here is what I did. 

olive oil

butter

carrot, minced or processed in food processor

onion, minced or processed in food processor

garlic, minced

flour

box of mac n cheese mix

5 1/2 cups chicken broth

half head broccoli, chopped

half n half, maybe a half cup

1 cup shredded cheddar 

ham cubes (instead of chicken)


Heated butter & olive in a pan. Sauteed carrot, onion, and salt until softened, added minced garlic, sauteed one minute longer. Added 2 T flour, cooked a few mins. Added chicken broth, brought to boil. Cooked 7 minutes, added broccoli. Cook a few mins. Then added some half n half, cheese packet, and Worcestershire and Tabasco. Cooked a minute or two. Then added freshly grated cheddar, ham cubes, and pepper. This was very good and I would probably make it again.
