Soup Series Part 4 - Broccoli Cheddar Soup like Panera

 Broccoli Cheddar Soup from Sip & Feast *tasted a lot like Panera's

I followed this recipe pretty close but I did add some Velveeta, because I feel like it helps keep the soup from being grainy. I also added a little cauliflower as I had some to use up. I did not do the crispy broccoli for the top of it. 

Here's what I did 

  1. Melted 4 T butter and 1 T olive oil in a pot
  2. Sauteed onion and carrots with salt, until softened
  3. Added minced garlic, cooked 1 minute
  4. Added 1/2 cup white wine, reduced
  5. Added 1/4 flour, cooked a few mins
  6. Added 3 1/2 cup chicken broth (I think I used a lot more than that)
  7. Added broccoli and cauliflower that had been processed in food processor
  8. Cooked about 10 mins
  9. Added 1 1/4 heavy cream and a little bit of velveeta
  10. Cooked a few mins
  11. Then added various shredded cheeses I had in the fridge and needed to use up. I used a little romano, a bit of muenster, a little bit colby jack and then shredded sharp cheddar.
  12. Mixed until smooth and melted. 
  13. Used immersion blender for a minute. 
  14. Added dashes of worcestershire and tabasco, pepper and nutmeg.
This came out freaking great. Tasted a lot like Panera's.
