Tex-Mex Rice

Tonight I made Tex-Mex Rice, a recipe from the Aug/Sept 2010 issue of Cook's Country. If you're not a member of cookscountry.com, you can view the recipe here. This wasn't bad, but it didn't wow me. It sort of felt like it was missing something, but I'm not sure what. Maybe some fresh cilantro & lime juice sprinkled on at the end, or something like that. I don't think I would make it again. But if you like RiceARoni spanish rice, this would most certainly be a healthier substitute and the flavor is similar.
