Blackberry Pie

My mother-in-law made amazing blackberry pies, and they were quite simple to make. She frequently used wild blackberries she picked herself, but you can use store bought of course. Here is the recipe.

Blackberry Pie

6 cups blackberries, approx
1 cup sugar, adjust more or less depending on sweetness of the berries
2 T cornstarch
1 pkg refrigerated pie crusts (2 discs for top & bottom crust), softened as directed on box
2 T butter or margarine, cut into small pieces

Mix berries with sugar and let sit for about an hour. Mix in cornstarch. Spray 9 inch pie pan with nonstick cooking spray, then place one round of pie dough into pan, fitting to pan. Pour berry mixture into pan. Dot with pieces of butter/margarine. Top with other round of pie dough. Crimp & seal edges, and cut 6 slits into top of dough. Place pie on baking sheet lined with foil and bake in 400 degree oven on lower middle rack until filling is bubbling, about 45 mins-1 hr. If crust browns too quickly cover with foil. Let cool a bit before serving. Serve warm with vanilla ice cream.
