Rolled Baked Chicken

Last week I tried this recipe for Rolled Baked Chicken. It was okay. I liked the concept of cooking the chicken wrapped up in foil. I didn't love the flavor of the peppers. I think maybe I'd cook a chicken using this method but changing the ingredients.
